Spicy Korean Beef Bulgogi Sandwich with Kimchi Coleslaw
150g beef
2 slices sandwich
1/2 cup kimchi
2 tbsp soy sauce
1 tbsp gochujang
1 tbsp sesame oil
1 cup, thinly sliced cabbage
1/2 cup, grated carrots
2 tbsp mayonnaise
1 tbsp rice vinegar
In a bowl, mix soy sauce, Gochujang, and sesame oil. Add the beef strips and marinate for 30 minutes to allow the flavors to infuse.
In a separate bowl, combine cabbage, carrots, kimchi, mayonnaise, and rice vinegar. Mix well to create the coleslaw mixture.
Heat a grill pan over medium-high heat. Grill the marinated beef strips for 2-3 minutes per side until cooked to your desired doneness.
Toast the sandwich bread slices. Place the grilled beef on one slice, top with kimchi coleslaw, and cover with the other slice of bread.
Slice the sandwich diagonally for a beautiful presentation. Serve the Spicy Korean Beef Bulgogi Sandwich with Kimchi Coleslaw with a side of pickled radishes and enjoy!
For an extra kick of heat, you can add sliced jalapenos to the sandwich or increase the amount of Gochujang in the marinade. You can also serve the sandwich with a side of crispy sweet potato fries for a delicious pairing.
