Spicy Grilled Chicken Salad with Chilli-Lime Dressing
1 piece chicken breasts
1 piece, finely chopped chilli
1 cup, shredded lettuce
1/2 piece, sliced cucumber
1/2 piece, thinly sliced red bell pepper
1/4 piece, thinly sliced red onion
2 tablespoons olive oil
1, juiced lime
1 tablespoon honey
to taste salt
to taste pepper
In a bowl, combine the olive oil, chopped chilli, lime juice, honey, salt, and pepper. Add the chicken breast and coat it well with the marinade. Let it marinate for at least 15 minutes.
Preheat a grill pan over medium-high heat. Grill the marinated chicken breast for about 6-7 minutes per side or until fully cooked. Remove from heat and let it rest for a few minutes before slicing.
In a large bowl, toss together the shredded lettuce, sliced cucumber, red bell pepper, and red onion. Add the sliced grilled chicken on top.
In a small bowl, whisk together 1 tablespoon of olive oil, lime juice, chopped chilli, honey, salt, and pepper to make the dressing.
Drizzle the Chilli-Lime dressing over the salad and toss gently to combine all the ingredients.
