Spicy Curd Rice with Caramelized Onions
1 large, thinly sliced onion
1 cup curd
1/2 cup, cooked rice
1, chopped red chili
1/2 tsp mustard seeds
5-6 leaves curry leaves
1, chopped green chili
1 tsp, finely chopped ginger
1 tbsp, chopped cashew nuts
2 tbsp, chopped cilantro
1, juiced lemon
In a pan, heat some oil over medium heat. Add thinly sliced onions and sauté until golden brown and caramelized, about 10-15 minutes. Set aside.
In a bowl, mix curd, cooked rice, chopped red chili, chopped green chili, finely chopped ginger, chopped cashew nuts, and chopped cilantro. Add the caramelized onions to the mix and combine well.
In a small pan, heat some oil. Add mustard seeds and curry leaves. Let them splutter for a few seconds. Pour this tempering over the spicy mix and mix well.
Squeeze fresh lemon juice over the spicy curd rice and give it a final mix to incorporate all the flavors.
