Mediterranean Lentil Zucchini Skewers
1/2 cup red lentils
1 medium, cut into chunks zucchini
6-8 pieces cherry tomatoes
1/2, cut into chunks red onion
1/4 cup, pitted kalamata olives
3 tablespoons olive oil
2 tablespoons lemon juice
2 cloves, minced garlic
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon pepper
In a bowl, combine red lentils, zucchini, cherry tomatoes, red onion, and kalamata olives. Add olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Toss well to coat the vegetables evenly. Let it marinate for 15 minutes.
Thread the marinated vegetables onto skewers, alternating between the different vegetables. This helps in even cooking and presentation.
Preheat a grill or grill pan over medium heat. Place the assembled skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are charred and tender.
Once the skewers are cooked, remove them from the grill. Serve the Mediterranean Lentil Zucchini Skewers hot with a side of tzatziki sauce or hummus for a complete meal.
