Luxurious Beef and Spinach Stuffed Pasta Shells
8 shells jumbo pasta shells
150g, sliced mushrooms
1 cup, grated parmesan cheese
3 cloves, minced garlic
2 tbsp butter
1 tsp salt
1/2 tsp black pepper
2 cups, chopped spinach
250g ground beef
1 cup milk
2 tbsp olive oil
1, finely chopped onion
1 tsp, chopped fresh thyme
1/4 tsp, grated nutmeg
Cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the sliced mushrooms and cook until they release their moisture. Add the ground beef, garlic, fresh thyme, salt, and black pepper. Cook until the beef is browned. Remove from heat and set aside to cool.
In a separate saucepan, melt butter over medium heat. Add the milk and bring to a simmer. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. Season with a pinch of nutmeg for extra richness.
Preheat the oven to 180°C. Fill each cooked pasta shell with a generous amount of the beef and mushroom mixture. Place the stuffed shells in a baking dish. Pour the creamy Parmesan sauce over the shells, covering them completely.
Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the sauce is bubbly and the tops are lightly browned.
