Honey Garlic Chicken and Bell Pepper Stir-Fry
150g chicken thighs
1/2 cup rice
1/2 red bell pepper
2 stalks scallion
2 tbsp honey
3 cloves garlic
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp cornstarch
1/2 bell pepper
Cut the chicken thighs into bite-sized pieces. Slice the red bell pepper and scallions. Mince the garlic cloves.
Cook the rice according to package instructions. Keep warm until ready to serve.
In a small bowl, whisk together honey, minced garlic, soy sauce, rice vinegar, and cornstarch until smooth. Set aside.
Heat oil in a large pan over medium-high heat. Add the chicken and cook until browned, about 5-6 minutes. Add the bell pepper, scallions, and stir-fry for an additional 2-3 minutes.
Pour the honey garlic sauce over the chicken and vegetables. Stir well to coat. Simmer for 2-3 minutes until the sauce thickens slightly.
