Cottage Cheese and Beet Burger with Couscous Tabouleh
1 medium, grated beet
1/2 cup cottage cheese
1/2 cup, cooked couscous
1 burger buns
a few leaves lettuce
1, sliced tomato
1/4, thinly sliced red onion
1/4, thinly sliced cucumber
1 tablespoon, chopped mint
1 tablespoon, chopped parsley
1 tablespoon lemon juice
2 tablespoons olive oil
to taste salt
to taste black pepper
In a bowl, mix the grated beet, cottage cheese, salt, and black pepper. Form the mixture into burger patties.
Heat a pan over medium heat and cook the burger patties for about 3-4 minutes per side, or until golden brown and cooked through.
In a bowl, combine the cooked couscous, chopped mint, parsley, cucumber, tomato, red onion, lemon juice, olive oil, salt, and black pepper. Mix well to combine.
Toast the burger bun. Place lettuce on the bottom bun, followed by the cooked beet and cottage cheese patty. Top with the tabouleh mixture and the top bun.
