Cheesy Stuffed Chicken Thighs with Cottage Cheese Mashed Potatoes
2 pieces chicken thighs
1/2 cup cottage cheese
2 medium-sized potatoes
1/2 cup, shredded cheddar cheese
2 stalks, chopped green onions
2 slices, cooked and crumbled bacon
2 cloves, minced garlic
2 tablespoons butter
1/4 cup milk
to taste salt
to taste pepper
Preheat the oven to 180°C. Make a pocket in each chicken thigh by carefully cutting along the side. In a bowl, mix cheddar cheese, green onions, bacon, and minced garlic. Stuff the mixture into the pockets of the chicken thighs. Season the thighs with salt and pepper.
Place the stuffed chicken thighs on a baking tray and bake in the preheated oven for 25-30 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
Peel and cube the potatoes, then boil them in salted water until tender. Drain the potatoes and mash them with cottage cheese, butter, and milk until smooth and creamy. Season with salt and pepper to taste.
Serve the cheesy stuffed chicken thighs hot alongside a generous helping of creamy cottage cheese mashed potatoes. Garnish with additional chopped green onions for freshness. Enjoy this comforting and flavorful meal!
For a twist, consider adding some chopped herbs like parsley or thyme to the mashed potatoes for extra flavor. You can also sprinkle extra cheddar cheese on top of the stuffed chicken thighs before baking for an even cheesier experience.
