Blueberry Almond Tart
1 cup blueberry
1 cup flour
2 eggs
1/2 cup almond flour
1/2 cup butter
1/2 cup sugar
1 tsp almond extract
1/4 tsp salt
1/2 cup heavy cream
2 tbsp powdered sugar
In a mixing bowl, combine flour, almond flour, sugar, salt, and cubed butter. Mix until the dough comes together. Press the dough into a tart pan, covering the bottom and sides. Bake in a preheated oven at 180°C for 15 minutes.
In a saucepan, heat blueberries with sugar over medium heat until they release their juices. In a small bowl, whisk together eggs and almond extract. Slowly pour the egg mixture into the blueberries while stirring constantly. Cook until thickened.
Pour the blueberry filling into the pre-baked crust. Bake the tart in the oven at 180°C for 25-30 minutes, or until the filling is set. Let it cool completely before serving.
In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form. Spread the whipped cream over the cooled tart.
